Tropical Fruit Salad with Honey and Lime
ngredients
3/4 cup sweetened coconut flakes, 2 tablespoons honey, 2 tablespoons chiffonade of fresh mint, Zest and juice of 1 lime, 2 kiwis, peeled and sliced, 1 banana, peeled and sliced on the bias, 1 small bunch red grapes
1 mango, peeled, pit removed and chopped, 1/2 large pineapple, peeled, cored and chopped
Directions
Preheat the oven to 350 degrees F.
Spread the coconut out on a baking sheet. Toast until golden, about 5 minutes. Remove from the baking sheet to a small bowl to cool.
Whisk together the honey, mint, lime zest and juice. Add the kiwis, banana, grapes, mango and pineapple and toss, making sure all the fruit is coated with the dressing. Sprinkle with the coconut before serving.

 One mouthful of this exotic fruit salad recipe with mint sugar and you can almost feel the sunshine!
Ingredients
½ pineapple, 1 ripe mango, 1 papaya, 2 kiwi fruit, juice of ½ lime, 1 small bunch fresh mint, leaves picked
2 tablespoons golden caster sugar, 200 g yoghurt,
Method
Refreshing, zingy and perfect for a hot summer day.
Trim the outside skin off the pineapple and cut out the hard core that runs down its centre. Lay it on a chopping board and cut it into chunks with a sharp knife. Place in a bowl.
Cut the flesh of the mango off the stone and scoop out the flesh from the skin with a spoon. Place into the bowl with the pineapple. Cut the papaya in half and scoop out the black seeds inside. Scoop the fruit out of the skin in the same way as with the mango. Place into the bowl.
Top and tail the kiwi fruit, then, sitting it on one of its flat ends, trim the furry skin off with a sharp knife. Slice the kiwi and place into the bowl. Drizzle the lime juice over your fruit.
Take four plates and divide the fruit between them. Pound most of the mint leaves with the sugar in a pestle and mortar or a flavour shaker. Spoon a little yoghurt over the top of each plate and sprinkle over the mint sugar and the rest of the mint leaves and serve.

It makes a great big bowl, big enough to feed a crowd so it's perfect to bring to a picnic, potluck or to serve at a backyard BBQ. This is easy enough for anyone to make – if you can use a knife, you can make this salad. The bananas are added just before serving so they don't turn brown.
Fruit salad always makes me think of my Dad, when I was younger he made a great big bowl of fresh fruit salad just about every night. It's the perfect dessert because it's all natural, made with nothing but fruit – it doesn't get cleaner than that!
In my past life I must have lived on a tropical island somewhere; the climate, blue oceans, palm trees, and sweet tropical fruit are my idea of a perfect world. Thank goodness we can get papayas, mangoes, coconut and pineapples here in the states, but there are still so many tropical fruits I'd love to see a lot more tropical fruit imported here one day such as fresh guanabana (sour sop) guava or passion fruit (maybe I need to get on a plane to somewhere tropical really soon).

Ingredients:
1 papaya, peeled and diced 3/4-inch cubes (5 cups), 2 mangoes, peeled and diced 3/4-inch cubes (2 1/2 cups), 1 fresh pineapple, peeled and diced reserving the juice 3/4-inch cubes (4 cups), 2 large bananas, peeled and diced 3/4-inch cubes (2 cups), 1/4 cup fresh grated coconut, for garnish
Directions:
Combine the papaya, mangoes, and pineapple in a large bowl and add the juice from the pineapple. Cover and refrigerate until chilled.
Just before serving, add the bananas and garnish with fresh coconut.
Makes 13 1/2 cups.
