Fruit salad Indian Style.
All we need is Milk (Skim milk for healthier version). curtard powder, sugar and a variety of fruits.
Ingredients:
1/2 gallon of Milk or one litre (approximately), 2.5 cups of sugar, 3/4 cup of vanilla (or strawberry) custard powder, pinch of almond powder, pinch of cardammom seeds powder, Assortment of thinly cubed fruits

- one cup small cubed apple (I keep skin on for more fibre), one cup cubed papaya, one cup cubed, mosambi(sweet lime/orange), one cup cubed peeled and seeded tangerine, 1/2 cup of cubed banana,
1/2 cup seeded/peeled cubed chickoo (optional), 1/2 cup seedless grapes (optional), (you can add some pomegranate seeds on top for garnish)
Method:
Boil the milk in a large pan on high to medium heat making sure to stir constantly / very frequently so it does not stick at the bottom. Now add sugar when it has boiled about half way thru. Next take the custard powder in a bowl and add some cold milk to it. Stir well to break all the lumps. Now add the mixture to the boiling milk. Next add the almond pwoder and the cardammom seeds powder and stir well. Keep stirring on low/medium constantly now as the milk will start to thicken quickly due to the custard powder. Stir for about five or so minutes and remove from the stove. Allow this mixture to cool off completely at room temperature. While the milk is cooling off, move to cut up all the fruits and keep them in separate bowls. Once the milk has completely cooled off, add the fruits very very slowly stirring with a fork as you add them, one by one. Keep the tangerines (if you have them) at the very end. Chickoo/ grapes and pomegranate seeds are optional. The best part of this recipe is that you can make a large bowl and refrigerate it for quite a few days. You cna also use the fruits that you have handy. strawberry and cherries are also a good addition to this recipe if they are in season. Chill in the refrigerator for a cooler feeling.
