"The perfect fruit salad for a backyard bbq or any occasion. There are never leftovers! This is one of my favorite fruit salad recipes, as I think the sauce really makes it. This salad is tastier the longer you can let it soak in its juices. I prefer 3 to 4 hours in the refrigerator before I serve it. Enjoy."
Following are the recipie ingredients of  fruit salad.
 2/3 cup fresh orange juice,  1/3 cup fresh lemon juice,  1/3 cup packed brown sugar,  1/2 teaspoon grated  orange zest,  1/2 teaspoon grated lemon zest,  1 teaspoon vanilla extract,  2 cups cubed fresh pineapple
 2 cups strawberries, hulled and sliced,  3 kiwi fruit, peeled and sliced,  3 bananas, sliced,  2 oranges, peeled  and sectioned,  1 cup seedless grapes seedless grapes,  2 cups blueberries
Directions
Bring orange juice, lemon juice, brown sugar, orange zest, and lemon zest to a boil in a saucepan over medium-high heat. Reduce heat to medium-low, and simmer until slightly thickened, about 5 minutes. Remove from heat, and stir in vanilla extract. Set aside to cool.
Layer the fruit in a large, clear glass bowl in this order: pineapple, strawberries, kiwi fruit, bananas, oranges, grapes, and blueberries. Pour the cooled sauce over the fruit. Cover and refrigerate for 3 to 4 hours before serving.

Spaghetti Fruit Salad Recipe
Ingredients
1 cup confectioners' sugar, 2 eggs, 1/2 cup lemon juice, 1/2 teaspoon salt, 1/2 pound spaghetti, broken into 2-inch pieces, 1 can (20 ounces) pineapple tidbits, 3 medium tart apples, diced, 1 carton (8 ounces) frozen whipped topping, thawed, 1/4 cup chopped walnuts, Maraschino cherries, halved.

1 serving (1 cup) equals 203 calories, 5 g fat (3 g saturated fat), 30 mg cholesterol, 95 mg sodium, 35 g carbohydrate, 2 g fiber, 4 g protein.
Directions
In a saucepan, combine sugar, eggs, lemon juice and salt; cook and stir over medium heat until temperature reaches 160° and mixture is thickened, about 4 minutes. Cool completely.
Cook spaghetti according to package directions; drain and rinse in cold water. Place in a large bowl.
Drain pineapple, reserving juice. Pour juice over the spaghetti; stir in apples. Toss gently; drain. Stir in the egg mixture and pineapple. Cover and refrigerate overnight.
Fold in whipped topping just before serving. Garnish with walnuts and cherries. Yield: 12-14 servings.
Mandarin Barley Salad Recipe
Ingredients
1 cup uncooked quick-cooking barley, 1 can (8 ounces) mushroom stems and pieces, drained, 1 cup diced  celery, 1/4 cup sliced green onion, 1/2 cup vegetable oil, 2 tablespoons cider vinegar, 2 tablespoons soy sauce, 1/2 teaspoon salt, 1 can (11 ounces) mandarin oranges, drained,
1/2 cup slivered almonds
 Nutritional Facts
1 serving (1 cup) equals 278 calories, 18 g fat (2 g saturated fat), 0 cholesterol, 500 mg sodium, 26 g carbohydrate, 6 g fiber, 6 g protein.
Directions
Cook barley according to package directions; drain and cool. In a bowl, combine the barley, mushrooms, celery and onions. In a jar with a tight-fitting lid, combine the oil, vinegar, soy sauce and salt; shake well. Pour over barley mixture and stir to coat. Gently stir in oranges and almonds. Cover and refrigerate for 4 hours or overnight. Yield: 6-8 servings.

Spring Rhubarb Salad Recipe
 Ingredients
4 cups diced fresh rhubarb
1-1/2 cups water
1/2 cup sugar
1 package (6 ounces) strawberry gelatin
1 cup orange juice
1 teaspoon grated orange peel
1 cup sliced fresh strawberries

1 serving (1/2 cup) equals 127 calories, trace fat (trace saturated fat), 0 cholesterol, 41 mg sodium, 31 g carbohydrate, 1 g fiber, 2 g protein.
Directions
Combine rhubarb, water and sugar in saucepan. Cook and stir over medium heat until rhubarb is tender. Remove from heat; add gelatin and stir until dissolved. Add orange juice and rind. Chill until syrupy. Add strawberries. pour into 6-cup mold; chill until set. Yield: 8-10 servings.

I've found this salad to be perfect for potlucks and special occasions. It cuts nicely into squares and can be served on lettuce leaves if you like.
