"The perfect fruit salad for a backyard bbq or any occasion. There are never leftovers! This is one of my favorite fruit salad recipes, as I think the sauce really makes it. This salad is tastier the longer you can let it soak in its juices.  2/3 cup fresh orange juice
 1/3 cup fresh lemon juice
 1/3 cup packed brown sugar
 1/2 teaspoon grated orange zest
 1/2 teaspoon grated lemon zest
 1 teaspoon vanilla extract
 2 cups cubed fresh pineapple
 2 cups strawberries, hulled and sliced
 3 kiwi fruit, peeled and sliced
 3 bananas, sliced
 2 oranges, peeled and sectioned
 1 cup seedless grapes seedless grapes
 2 cups blueberries
Directions
Bring orange juice, lemon juice, brown sugar, orange zest, and lemon zest to a boil in a saucepan over medium-high heat. Reduce heat to medium-low, and simmer until slightly thickened, about 5 minutes. Remove from heat, and stir in vanilla extract. Set aside to cool.
Layer the fruit in a large, clear glass bowl in this order: pineapple, strawberries, kiwi fruit, bananas, oranges, grapes, and blueberries. Pour the cooled sauce over the fruit. Cover and refrigerate for 3 to 4 hours before serving.

Apple Kiwi Salad
Get your daily amount of fruit intake. Make a juicy apple kiwi salad. These are two fruits I never would have thought to put together.
Ingredients
3 Red Delicious apples
3 Yellow Delicious apples
3 bananas
3 kiwis
1/2 cup organic apple juice
1 cup fresh pineapple
Instructions
Peel apples, core and slice in small slices.
Peel and slice kiwis, slice bananas, and cut pineapple into small pieces.
Add apple juice, mix well, cover and refrigerate.
This summer fruit salad is great for picnics and is a healthy alternative to unhealthy side dishes. This quick fruit salad pairs great with a chicken dish, or even as a light dessert.
Ingredients
1 12-ounce container Cool Whip Free, thawed
1 small package sugar-free instant vanilla pudding mix
1 15-ounce can mixed fruit (with no sugar added), drained
1 can mandarin orange sections (with no sugar added), drained
1 fresh banana, sliced
Instructions
1. Combine Cool Whip Free and sugar-free pudding mix.
2. Add the mixed fruit, mandarin oranges and banana and mix.
3. Chill in refrigerator at least one hour, or until ready to serve.
This is an amazingly sweet, yet healthy fruit salad. Once in a while you can break away from that diet and treat yourself. This is great for a holiday get together.
Ingredients
1 cup pineapple chunks, drained, 1 cup mandarin oranges, drained, 1 cup flaked coconut, 1 cup small low-fat marshallows, 1 cup fat-free sour cream, Instructions, Mix the sour cream with the coconut.
Add the pineapple.
Then stir in the marshmallows.
Finally add the mandarin oranges and blend slowly.
I add these last so that they aren't overmixed and break apart.
It's best to make this several hours in advance so that the flavors have time to blend.
Notes: I usually double this recipe as 1 regular can of pineapple chunks is approx. 2 cups. 1 can of oranges is approximately 1 cup, so I get two. And I buy my sour cream in a 16 oz. container to have my 2 cups of sour cream. This eliminates alot of measuring. The colored marshmallows are festive during the holidays. I use the rabbit shaped ones at Easter.

Ingredients
2 quarts spinach, raw
2 quarts Romaine lettuce
1 quart chicory
1 quart lettuce
fresh pineapple cut in pieces, three per bowl
1 fresh mango, cut in strips, about 2-3 per bowl
1 avocado, dipped in lemon juice and cut in strips
1 fresh coconut, cut in thin slices
2 oranges, thinly sliced with skins left on
2 bananas, to taste, cut in chunks
light mayonnaise, to taste
chopped peanuts (or coconut), to taste
1 pint strawberries, or any berry of your choosing
4 limes
1 quart light mayonnaise
1 cup Cool Whip Free
2 tablespoons sugar substitute
few drops green vegetable coloring
Instructions
In a two-gallon bowl, stem, wash, and tear into medium-sized pieces: raw spinach, romaine, chicory and lettuce.
Add fresh pineapple cut in pieces, fresh mango in strips, avocado, dipped in lemon juice and cut in strips, fresh coconut, oranges, bananas, thinly coated with mayonnaise and dipped in chopped peanuts (or coconut) and strawberries, or the berries of your choosing. Arrange the fruits in individual bowls and serve with lime dressing.
Mix in Cool Whip Free sweetened with sugar substitute and a few drops of green vegetable coloring.
Serve immediately.
