Ingredients
2 Granny Smith apples, cored and cut into 1/2-inch chunks, 1 pound honeydew melon, cut into 1/2-inch chunks, 1 (20-ounce) can pineapple rings in syrup, drained and cut into small wedges, 1/2 cup dried cherries
1/2 cup plain yogurt, 1/2 cup cream of coconut, Pinch of salt
Directions
In a large bowl add the apple chunks, honey dew melon, pineapple chunks, dried cherries, yogurt, cream of coconut and a pinch of salt. Stir to combine.
Spread the coconut in a single layer on a baking pan. Toast coconut in oven until pale golden brown, watching carefully to avoid burning, about 8 minutes.
In a mixing bowl, whisk together the yogurt, honey, rum, and mint. In another large bowl, combine the fruit. Pour the yogurt mixture over the fruit and toss to combine. Allow to sit for 10 minutes so the fruit can absorb the flavors. Sprinkle the toasted coconut on top and serve.
Directions
In a large bowl, combine fruit cocktail, bananas and cherries. Reserve 3 slices of banana and 1 cherry for garnish.
In a mixing bowl, whip the cream to soft peaks with an electric mixer. Add sugar and vanilla, and whip to combine.
Fold the whipped cream into the fruit. Garnish with a fan of banana slices. Place cherry at the bottom of the banana fan.

1/3 cup orange juice, 1/3 cup unsweetened pineapple juice, 1/4 cup sugar,1 egg, beaten, 1 tablespoon plus 1/4 cup lemon juice, divided, 1 cup heavy whipping cream, whipped or 2 cups whipped topping
6 medium red apples, diced, 6 medium firm bananas, sliced, 3 cups halved green grapes, 1/4 cup chopped pecans
One serving (prepared with egg substitute equivalent to 1 egg and reduced-fat whipped topping) equals 111 calories, 2 g fat (0 saturated fat), trace cholesterol, 7 mg sodium, 23 g carbohydrate, 0 fiber, 1 g protein. Diabetic Exchanges: 1-1/2 fruit, 1/2 fat.
Directions
In a heavy saucepan, combine orange and pineapple juices, sugar, egg and 1 tablespoon of lemon juice. Bring to a boil over medium-high heat, stirring constantly. Remove from the heat.
When cool, fold in the whipped cream. In a large serving bowl, toss apples with remaining lemon juice. Add bananas and grapes. Add the dressing; stir to coat. Refrigerate. Fold in pecans just before serving. Yield: 20 servings.

This fruit salad was a staple at most family get-togthers and the best part about it is that you don't have to have any experience in the kitchen to whip it up! It is just a matter of dumping five ingredients in a bowl and mixing it together. It is a perfect side dish to any meal or is great to take to any pot-luck dinner (it can easily be doubled or tripled). There are SO many variations of this salad (I included a couple below), but I like the original way my Grandma makes it best.

Grandma's Five Cup Creamy Fruit Salad
Ingredients:
1 (11 ounce) can mandarin oranges, drained, 1 (8 ounce) can crushed pineapple, drained, 1-2 cups miniature marshmallows, 1 cup flaked coconut, 1 cup sour cream
Don't be scared of the sour cream! I know it sounds weird. I promise that all the sweetness from the other ingredients evens it all out. It's delicious!
Directions:
Make sure your fruit is VERY well-drained or you will have a watery salad. Combine the oranges, pineapple, marshmallows, coconut, and sour cream. Stir until all mixed together. Refrigerate for 4-8 hours before serving.
Variations:
-Use vanilla yogurt in place of sour cream.
-Use Pina Colada yogurt in place of sour cream.
-Add 1/2 cup maraschino cherries.
-Add chopped pecans for a crunch.
-Top with corn flakes for a crunch.
-Use Cool-Whip in place of sour cream.
