My children love to have fruit salad as an after school snack.  I often serve it to them with organic yogurt, adding a bit of vanilla and agave nectar to the yogurt.
It’s just about fruit season here in Colorado and everything is starting to look luscious.  We have strawberries ripening on the plants in the front yard and peaches (still green) on our peach tree in the back.  Right now however, even though I’m harvesting mountains of kale and various salad greens from our front and back yard, I am still relegated to purchasing my fruit at the grocery store.  We’re not quite there yet.  As in, summer.
To make your fruit salad more glamorous, splurge on fancy, expensive fruit, and use pineapple in place of the peaches for the recipe below.  You also might like to add a bit of unsweetened shredded coconut, if you go tropical with your fruit salad.
I like to keep my fruit salads simple with 3 or 4 different fruits so that I can really taste each of the distinct flavors.  Here’s one (well actually two) of my favorite fruit combos.

Simple Fruit Salad Recipe :
3 bananas, sliced, 4 medium peaches or 1 medium pineapple, sliced, 1 pint strawberries, hulled and sliced
1 pint blueberries, Combine all of the fruit in a large bowl, Refrigerate for 1 or 2 hours (not longer or the bananas might brown)
When I put together my post for a Mother’s Day Brunch, it was absolutely amazing to me, how dire the offerings were on the internet for a simple fruit salad.  First, it was terribly difficult to find a fruit salad that did not have sugar added to it.  I don’t know about you, however, I don’t actually eat a lot of fruit because it has so much sugar in it in the first place.  Adding more sugar to all that sugar?  Not a happy day for my body.
During my dissatisfying quest to find a simple fruit salad, I did find this simple fruit salad post on one of my favorite blogs, Mark’s Daily Apple.  Funny, he discussed the exact issue that I was running into.  It was nice to know I was not alone.

For filling, place cherries and blueberries in a 2 quart baking dish
Sprinkle fruit with agave, lemon juice and vanilla, then toss in arrowroot
To make the crumble, in a large bowl, combine almond flour and salt
In a smaller bowl, combine grapeseed oil and agave
Mix the wet ingredients into dry to form the topping
Then crumble topping over fruit mixture
Cover and bake at 350° for 1 hour and 15 minutes, until bubbling
Uncover and bake a few more minutes until topping is golden brown
Remove from oven and serve

Over here in Colorado, it’s slug season.  Despite my best efforts at slug abatement in my beloved garden (yogurt container tops filled with beer, mulching, quadruple washing my greens), the other night while I was eating dinner, a huge black slug crawled out of my salad and onto the table.  Yikes!  For those of you who hang out with me on Facebook you got moment to moment updates on the slug incident.  Special thanks to Anaquita Rose who suggested washing each leaf individually.  Why didn’t I think of that?!

Mixed Berry and Banana Fruit Salad
Oh, say can you see, by the dawn’s early light… Happy Fourth of July! If you are thinking about ideas for something red, white, and blue to bring to a July 4th gathering, consider this simple mixed berry and banana salad. It’s light and easy, with strawberries, raspberries, blueberries, chopped apple, and bananas, tossed together with honey and lemon juice.

Mixed Berry and Banana Fruit Salad Recipe
INGREDIENTS
2 cups hulled, roughly chopped strawberries, A handful of raspberries, 1 cup blueberries,1 apple, peeled, cored, roughly chopped, 2 bananas, peeled and thickly sliced, 1/2 teaspoon lemon zest, 2 teaspoons lemon juice, 1 teaspoon honey.
METHOD
Prep the berries before the bananas and apples, and add them to a large bowl. As soon as you add the bananas and apples, sprinkle lemon juice over them to keep them from getting brown. Add the zest and the honey and gently toss to combine.
Serve immediately. Or cover and chill for up to 2 hours before serving.

These salads are quick and easy, require minimal or no cooking, and are the perfect way to enjoy all the produce that's in season now.
Arugula, Grape, and Sunflower Seed Salad
By including a variety of ingredients, salads are often a nutritional powerhouse: This recipe provides lots of antioxidants from the grapes, healthy fats and vitamin E from the sunflower seeds and grapeseed oil, and folate and vitamin A from the arugula. A sweet mustard vinaigrette dressing matches both the peppery bitterness of the greens and the sweet juiciness of the grapes. Try this salad topped with salmon or tuna for a healthful dinner.

French bistro classic, the tuna Niçoise, becomes healthier with extra lettuce and veg and low fat dressing
Method
Bring a large pan of water to the boil. Add the potatoes and the eggs, and cook for 7 mins. Scoop the eggs out of the pan, tip in the green beans and cook for a further 4 mins. Drain the potatoes, beans and eggs in a colander under cold running water until cool. Leave to dry.
Peel the eggs and cut into quarters. Arrange the lettuce leaves in 2 shallow bowls. Scatter over the beans, potatoes, tomatoes and egg quarters. Pat the anchovies with kitchen paper to absorb the excess oil and place on top.
Flake the tuna into chunks and scatter over the salad. Mix the mayonnaise and 1 tbsp cold water in a bowl until smooth. Drizzle over the salad and serve.
A Middle Eastern-style mezze bowl with healthy grains, parsley, mint and coriander

1 red onion, finely chopped
85g raisins or sultanas
100g feta cheese, crumbled
200g pomegranates seeds from tub or fruit

Cook the quinoa following pack instructions – it should be tender but with a little bite. Drain well and spread over a platter or wide, shallow bowl to cool quickly and steam dry.
When the quinoa is just about cool stir through all of the remaining ingredients with plenty of seasoning.
Squid, samphire & pea salad
Cooking time
A seafood salad using dressed calamari rings and samphire, a green coastal plant that tastes of the ocean
Ingredients
400g fresh peas, podded
1 shallot, finely chopped
juice 1 lemon, plus wedges to serve
3 tbsp olive oil
4 medium squid, cleaned (ask your fishmonger to do this) and cut into 5cm strips, leaving tentacles whole
50g butter, softened
100g samphire
85g bag watercress
1 tsp chopped flat-leaf parsley

Bring a large pan of salted water to the boil, add the peas and cook for 3 mins until tender. Drain and leave to steam-dry.
Tip the shallot into a bowl with 1 tbsp lemon juice, olive oil, squid and lots of black pepper. Toss everything together and leave to sit for a few mins.
Meanwhile, place a frying pan over a medium heat. When the pan is hot, pour in the dressed squid. Cook for 3-4 mins, moving it around the pan until the tentacles curl up and the squid pieces turn opaque. Add the butter, samphire and peas, toss together for a few mins, season well and remove from the heat.
Scatter the watercress over a large serving dish. Tip over the squid, peas and samphire, strew with the parsley, add a squeeze more lemon juice and eat warm, with lemon wedges.

 3 large cucumbers, peeled, halved lengthwise, seeded, and cut into 1/4-inch slices
 1 tablespoon salt
 1/2 cup white sugar
 1/2 cup rice wine vinegar
 2 jalapeno peppers, seeded and chopped
 1/4 cup chopped cilantro
 1/2 cup chopped peanuts
Directions

Toss the cucumbers with the salt in a colander, and leave in the sink to drain for 30 minutes. Rinse with cold water, then drain and pat dry with paper towels.
Whisk together the sugar and vinegar in a mixing bowl until the sugar has dissolved. Add the cucumbers, jalapeno peppers, and cilantro; toss to combine. Sprinkle chopped peanuts on top before serving.

Directions
On a large platter, alternate and overlap the tomato slices, mozzarella cheese slices, and basil leaves. Drizzle with olive oil. Season with sea salt and pepper.

Directions
Place peas in a colander, and run warm water over them until they are thawed. Place in a large bowl.
Toast almonds in a skillet over medium heat. Then combine with peas.

Directions
Thread peppers onto metal or soaked wooden skewers; grill or broil for 10-12 minutes or until edges are browned. Remove from skewers and place in a large bowl.
Add onion, mozzarella and olives; toss gently. Cover and refrigerate.
In a jar with tight-fitting lid, combine vinaigrette ingredients, shake well. Pour over the pepper mixture just before serving; toss to coat. Yield: 10-12 servings.

Chicken Waldorf Salad
Ingredients
Salad, 1 medium apple, unpeeled, chopped, Juice of 1 lemon (about 2 tablespoons), 2 cups diced cooked chicken (about 1 large breast), 1 cup red seedless grapes, halved, 1 stalk celery, finely chopped, 1/4 cup golden raisins, 1/2 cup toasted walnuts, coarsely chopped
Dressing:
3/4 cup yogurt (preferably Greek non-fat), 1/4 cup mayonnaise, Juice of 1/2 orange (about 1/4 cup), 1/4 teaspoon kosher salt.
Directions
Serving suggestion: Baby greens, extra grapes, raisins and walnuts for garnish
Coat the chopped apple with the lemon juice in a large bowl. Add the chicken, grapes, celery, raisins and walnuts, and gently combine.
In a small bowl, combine the yogurt, mayonnaise, orange juice and salt. Gently fold the dressing into the salad. Serve on a bed of greens.

Proper Chicken Caesar Salad
Ingredients
4 whole free-range or organic chicken legs, skin on, 1 loaf ciabatta bread (about 9 ounces), torn into thumb-sized pieces, 3 sprigs fresh rosemary, leaves picked and roughly chopped, Olive oil, Sea salt and freshly ground black pepper, 12 thin slices pancetta or bacon, 1/4 clove peeled garlic
4 anchovy fillets in olive oil, drained, 3 ounces freshly grated Parmesan, plus a few shavings to serve
1 heaped tablespoon creme fraiche, 1 lemon, juiced, Extra-virgin olive oil, 2 or 3 heads romaine lettuce, outer leaves discarded.
Directions
With my own versions of the classics, like Caesar salad, it's not about changing things entirely; it's about respecting the original while bigging up the flavors and textures where I can. My twists for this salad are to use chicken legs (not dry old breasts!), smoky pancetta and lovely rustic croutons to suck up all the juices. It's a lovely little salad with just a hint of attitude - and it's versatile, as you can serve it hot or cold.
P.S. Use your imagination - if you have any other unusual salad leaves, flowers or herb shoots lying around, chuck some in to make it look a little less predictable.
Preheat the oven to 400 degrees F.
Place the chicken legs in a snug-fitting roasting pan with the pieces of torn-up bread. Sprinkle with the chopped rosemary, drizzle with olive oil and season with salt and pepper. Mix with your hands to make sure everything is well coated, then lift the chicken legs up to the top, so they sit above the bread.
