"The perfect fruit salad for a backyard bbq or any occasion. There are never leftovers! This is one of my favorite fruit salad recipes, as I think the sauce really makes it. This salad is tastier the longer you can let it soak in its juices. I prefer 3 to 4 hours in the refrigerator before I serve it. Enjoy."
Ingredients
2/3 cup fresh orange juice, 1/3 cup fresh lemon juice. 1/3 cup packed brown sugar, 1/2 teaspoon grated orange zest, 1/2 teaspoon grated lemon zest, 1 teaspoon vanilla extract, 2 cups cubed fresh pineapple
 2 cups strawberries, hulled and sliced,  3 kiwi fruit, peeled and sliced, 3 bananas, sliced, 2 oranges, peeled and sectioned,  1 cup seedless grapes seedless grapes, 2 cups blueberrie
Directions
Bring orange juice, lemon juice, brown sugar, orange zest, and lemon zest to a boil in a saucepan over medium-high heat. Reduce heat to medium-low, and simmer until slightly thickened, about 5 minutes. Remove from heat, and stir in vanilla extract. Set aside to cool.
Layer the fruit in a large, clear glass bowl in this order: pineapple, strawberries, kiwi fruit, bananas, oranges, grapes, and blueberries. Pour the cooled sauce over the fruit. Cover and refrigerate for 3 to 4 hours before serving.

For even more bite, consider adding very thinly sliced jalapeno peppers. The best way to do this is to slice a fresh pepper in half, scrape out the seeds and ribs, then use a mandoline to slice the chili paper-thin. Mix into the salad for a great sweet-and-heat blend.
And no matter what savory element you add, make sure to also add a pinch of salt. It won't make the salad tasty salty, but it will highlight the natural sweetness of the fruit.

Tossing fruit in a lemon-infused syrup lightly sweetens it and keeps it from browning once it's cut and stirred into a salad. Feel free to substitute whatever fruit you may have on hand for the choices here. If you plan to use bananas, though, do not add them until just before you're ready to serve the dish.

Method
The key to a good fruit salad is lovely ripe, sweet fruit. Pick up whatever looks beautiful and ripe – anything hard will be sour and you don't want that! This recipe works well with pretty much whatever's in season.
Make the syrup. Place the sugar and mint stalks in a small saucepan with 200ml water and bring to the boil. Turn the heat off, then add the lime zest and juice, vanilla pod and seeds. Mix it all together and place to one side to cool down. You want a lovely thick syrup, but remember it will thicken as it cools.
Wash the fruit gently in cold water and drain in a colander. Halve and stone the cherries and chop any larger berries in half, then spread them out on a wide, flat dish. Halve and stone the peaches and apricots, then cut them into nice wedges and put with the berries.
Halve the melon, scoop out the seeds and chuck them away. With the same spoon, over the dish of fruit, scoop out curls of melon until you reach the green skin. Pour half of the syrup over the fruit, cover and chill for a while, so it soaks up all that lovely flavour.
To serve, pick out the mint stalks, then sprinkle over the mint leaves. Serve with dollops of natural yoghurt if you like, and a little jug of your leftover syrup for drizzling over.
Summer Fruit with Wine and Mint
Ingredients
1 1/4 cups dry white wine, 1/3 cup sugar, 1/2 ripe cantaloupe, halved, seeded, cut into 3/4-inch cubes (about 3 cups), 1 basket (8-ounce) fresh strawberries, quartered, 1 cup seedless green grapes, halved lengthwise, 1 tablespoon chopped fresh mint leaves.
Directions
Bring the wine and sugar to a boil in a small saucepan, stirring until the sugar is dissolved. Boil for 2 minutes. Remove from the heat.
Chop and combine the cantaloupe, strawberries, grapes, and mint in a large bowl. Pour the warm wine mixture over; toss to coat. Cover and refrigerate until cold, stirring occasionally, at least 2 hours.
Transfer to the fruit mixture to a wide jar with a tight-fitting lid. Keep chilled.
