I have a confession to make. I have sort of an obsession with office supplies. For instance, I just love, love, love sharp pencils—and by the way, for me it’s Ticonderoga #2′s all the way, baby! I also have an up-close and personal relationship with office supply stores like Staples and Office Depot. When I go in one of those places, I’m like a kid in a candy store. I mean, aside from stocking reams and reams of paper I can use to print cool stuff on my printer, they’ve got labels for anything and everything, postage scales, Sharpie pens in every color of the rainbow, and tablets with yellow lined paper. I can never seem to buy enough of those yellow tablets. I buy the mini size in bulk packages, and I go through them like there’s no tomorrow. I also have an obsession with desks. I worked in an office for 10 years, and I just LOVE having a desk. There’s something about having a place to organize all my cool office supply stuff that is just totally awesome. But I think people might be taking notice of this obsession I’ve got, and they have opinions about it, too. In fact, my best friend gave me this name plate that she had custom-made just for me to put on my desk. On the front it has my name and a quote that relates to my love of genealogy.
But if you flip it around, it says this:
Well, I guess that pretty much sums it up, and although I admit it’s true, I like to display the side with my name on it. The problem is that my son sneaks into my office from time to time and switches it around to the Desk Nerd side. See, even he has an opinion about it! Is there anybody out there that can relate to my obsession with office supplies, or am I really the only Desk Nerd around?
Okay, now that I got that out of my system, let’s get on to today’s recipe. I named it Fruit Salad for a Crowd because it makes a great big bowl of it, but you don’t really need a crowd to make it. I sometimes make it just for my family, and then the leftovers are great for some tasty low-fat lunches. And that’s perfect since I’m currently living by the rules of The See’s Diet while my sister and I are having a diet contest. To make this salad, you’ll need a pineapple, a cantaloupe, mangoes, strawberries, grapes, blueberries, and powdered sugar. Cut the pineapple and the cantaloupe into bite-sized pieces and put them in a large bowl.
Peel the mangoes with a potato peeler.
Cut the fruit from the mango seeds and cut it into bite-sized pieces, adding it to the bowl.
Wash the strawberries, grapes, and blueberries. Cut the strawberries into bite-sized pieces, and add all to the bowl.
The amount of powdered sugar you need depends on how much fruit you have, how ripe your fruit is, and personal preference. Start off by adding about 3 cups of powdered sugar to the fruit bowl and stir to combine until the powdered sugar mixes with the juices from the fruits and no longer looks white. Do a taste test and add more powdered sugar if desired.
It tastes so fresh and healthy!
