Lots of apples are grown in southern Illinois, and this is one of my favorite ways to use them. I like Golden Delicious, or a combination of Golden and Red Delicious for pretty color, but you can use whatever type of apple you prefer. The cooked dressing gives the salad an old-fashioned feel.
Ingredients
1/4 cup sugar, 1/4 cup packed brown sugar, 1 tablespoon all-purpose flour, 2/3 cup water, 1 egg, lightly beaten, 1 teaspoon white vinegar, 1-1/2 teaspoons butter, 3 medium apples, diced, 2 medium firm bananas, sliced, 1/3 cup diced celery, 1/2 cup seedless red grapes, halved, 1/2 cup fresh pineapple chunks, 1/3 cup chopped cashews.
Directions
For dressing, in a small saucepan, combine the sugars, flour and water until blended. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. Remove from the heat.
Stir a small amount into the egg; return all to the pan. Cook and stir until mixture reaches 160° and coats the back of a metal spoon. Remove from the heat; gently stir in vinegar and butter. Cool completely.
In a large bowl, combine the apples, bananas, celery, grapes, pineapple and cashews. Drizzle with dressing and toss to coat. Cover and refrigerate until chilled. Serve with a slotted spoon. Yield: 8 servings.

Coccumber apple fruit salad
1Tblsp fetta cheese
2 Tblsp Maple farms fat free balsamic, vinagrette, 2 Tbls Grape 1/2s, 1/8 cup Celery chopped, 1 tbls Rice Vinegar
Directions
Chop everthing up and eat or chill then eat. The longer the cumumbers emmerse in the dressing the more the flavor is absorbed.
Fresh Apple Salad
ingredients
1 cup raisins, 1 1/2 cup orange juice, 2 cups celery, diced, 3 cups apples, diced, 1/2 cup seedless grape halves, 1 cup walnuts or pecans, coarsely chopped or halves, 1 cup mayonnaise, 1 cup sour cream
directions
Soak raisins in orange juice overnight. Drain, then combine with other ingredients until thoroughly mixed.
Chill until time to serve.

Apple-Grape Salad
ingredients
1 envelope unflavored gelatin, 1 cup Rome or Fuji apple, unpared, diced, 1/4 cup water, 1/2 cup red grapes, halved and seeded, 1 1/2 cup apple juice, 1/4 cup chopped celery
directions
Soften gelatin in water for 5 minutes. Heat gelatin over low heat, stirring constantly, until dissolved. Add apple juice. Chill until mixture begins to thicken. Stir in fruit and celery. Pour into 3 cup mold. Chill until set.

Apple Almond Salad
ingredients
1/4 cup canola oil, 2 tablespoons splenda, tablespoons cider vinegar, 1/4 teaspoon salt, 1/8 teaspoon almond extract, 6 cups torn mixed salad greens, 3 medium-size apples, cut into wedges, 1 cup thinly sliced celery, 2 tablespoons sliced scallions, 1/3 cup slivered almonds, toasted
directions
In a screw-top jar, combine the oil, splenda, vinegar, salt, and almond extract. Cover the jar and shake well until the sugar and salt are dissolved.
Chill in the refrigerator for several hours.
Just before serving, combine the greens, apple wedges, celery, and scallions in a salad bowl.
Sprinkle with the almonds. Pour the dressing over the salad and toss. Serve immediately.
