Marshmallow Fruit Salad Recipe
Christine Mills relies on convenient cans of pineapple chunks, fruit cocktail and mandarin oranges to speed up this marshmallow fluff. The Buffalo, New York subscriber dresses up the salad a bit by stirring in the rich sour cream and chopped pecans for a pleasant crunch.
Ingredients
1 can (20 ounces) pineapple chunks, drained, 1 can (15 ounces) fruit cocktail, drained, 1 can (15 ounces) mandarin oranges, drained, 1 cup chopped pecans, 1 cup (8 ounces) sour cream, 2-1/2 cups whipped topping,3 cups miniature marshmallows

1 serving (1 cup) equals 252 calories, 13 g fat (5 g saturated fat), 13 mg cholesterol, 21 mg sodium, 32 g carbohydrate, 2 g fiber, 2 g protein.
Directions
In a large serving bowl, combine the fruit, pecans and sour cream. Fold in whipped topping and marshmallows. Cover and refrigerate until serving. Yield: 10-12 servings.

I made this for a party and almost didn't serve it to my guests. The mix of sour cream and pineapple made the entire dish taste 'sour'. I ended up picking out the pineapple pieces and adding granulated sugar to help sweeten the salad. It helped but still wasn't that tasty. I won't make again.

MARSHMALLOW FRUIT SALAD
1 large can fruit cocktail, 1 can Mandarin oranges, 1 (20oz) can chunk pineapple, 3 oz. cream cheese
8 oz. Cool Whip, 3 oz. strawberry banana Jell-O, 1 bag mini marshmallows
chopped fresh fruit (bananas, grapes, strawberries) (optional)
Open and drain all canned fruit. If also using fresh fruit, chop and set aside in a bowl. Soften cream cheese in a large bowl.

I made this with a few modifications: Sugar free peach jello, Pomegranate instead of the pineapple, Canned peaches instead of the fruit cocktail, 1/4 bag of marshmallows, Blueberries, Raspberries, Strawberries, Macintosh apples, Shredded coconut. Turned out great! We will make this again soon.
